Ingredients
1 cup all-purpose flour
1 cup wheat flour
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
2 Tablespoons brown sugar
1/2 cup molasses
2 eggs, separated
2 Tablespoons melted butter
1 cup milk
Instructions:

Preheat griddle to 375 degrees. Mix dry ingredients together. In a separate bowl, mix together all wet ingredients except egg whites. Add wet ingredients to dry, gently folding together. Whip egg whites until stiff, then fold into batter in 2 batches.

Cook pancakes on greased griddle until golden brown. Serve with freshly whipped cream, powdered sugar, and New Hampshire maple syrup.
