Ginger Asparagus Stir Fry

This easy asparagus recipe makes a great vegetable side dish. Plenty of flavor and spice thanks to ginger root and red pepper flakes.

Ingredients
Serves: 4
- 3 teaspoons cornstarch
- 1/2 cup water
- 1/2 tablespoon soy sauce
- 1/2 tablespoon honey
- 1 pound asparagus, trimmed of stems cut into 2-inch pieces
- 1 tablespoon minced fresh ginger root
- 2 teaspoons peanut oil
- 2 garlic cloves, minced
- 1/4 teaspoon crushed red pepper flakes
- 1 tablespoon sesame seeds
Preparation method
Prep: 10 mins | Cook: 6 mins
1. In a bowl, whisk cornstarch with water, soy sauce, and honey.
2. Heat peanut oil in a large skillet or wok over high heat. Add asparagus and cook, stirring constantly, for about 2 minutes. Add ginger, garlic, red pepper flakes, and sesame seeds and continue to cook for another 2 minutes. Asparagus should be bright green but tender.
3. Pour cornstarch sauce over the hot asparagus in the skillet and toss to combine. When the liquid boils, stir and cook for 2 more minutes to thicken the sauce.
4. Serve over rice or pasta.
