Ingredients
1 small | cauliflower, in florets |
3 medium | tomatoes, trimmed and quartered |
salt and freshly ground black pepper | |
2 medium | carrots, peeled and cut into 2.5cm slices |
1 | leek, trimmed and sliced |
¼ | cabbage, trimmed and sliced |
2 | green bell peppers, seeded and cut into thin strips |
1 medium | aubergine, trimmed and cut into 1cm slices |
225 g | small french beans, trimmed and cut in half |
225 g | okra, cleaned |
2 large | onions, peeled and sliced |
150 ml | extra vergin olive oil |
Instructions
Preheat the oven to 190°C.Put all the vegetables on a baking tray or in a large casserole dish and season with salt and pepper. Add the oil and mix until all vegetables are well coated.
Bake for 30-45 minutes or until golden and soft. Adjust the seasoning and serve with fresh white bread.
