|1 small||cauliflower, in florets|
|3 medium||tomatoes, trimmed and quartered|
|salt and freshly ground black pepper|
|2 medium||carrots, peeled and cut into 2.5cm slices|
|1||leek, trimmed and sliced|
|¼||cabbage, trimmed and sliced|
|2||green bell peppers, seeded and cut into thin strips|
|1 medium||aubergine, trimmed and cut into 1cm slices|
|225 g||small french beans, trimmed and cut in half|
|225 g||okra, cleaned|
|2 large||onions, peeled and sliced|
|150 ml||extra vergin olive oil|
InstructionsPreheat the oven to 190°C.
Put all the vegetables on a baking tray or in a large casserole dish and season with salt and pepper. Add the oil and mix until all vegetables are well coated.
Bake for 30-45 minutes or until golden and soft. Adjust the seasoning and serve with fresh white bread.
