Chicken fried rice recipe details
Ingredients
500 g | chicken breast |
½ tsp | cornstarch |
1 tsp | salt |
1 tsp | white pepper |
5 tbsp | vegetable oil |
2 medium | eggs, lightly beaten |
100 g | bean sprouts |
100 g | mushrooms, sliced |
600 g | rice, cooked |
2 tbsp | soy sauce |
2 | green onions, chopped |
Instructions
Cook rice until tender, drain, set aside.Remove bones and skin from chicken breast. Cut into pieces and in a bowl toss together chicken cornstarch, 1/2 teaspoon salt and a dash of white pepper.
Heat wok until very hot. Add 1 tablespoon oil. Add eggs and cook and stir until eggs are thickened but still moist. Remove eggs from wok.
Wash and dry the wok.
Heat wok and add 2 tablespoons oil. Add chicken and stir fry until chicken turns white.
Add bean sprouts, mushrooms and 1/2 teaspoon of salt. Stir fry 1 minute. Remove from wok and drain.
Heat wok, add remaining oil, coat sides. Add rice and stir fry 1 minute. Stir in soy sauce and dash white pepper.
Add eggs, chicken mixture, green onions and stir fry for another 30 seconds.
