German potato dumplings recipe details
Ingredients
500 g | potatoes, floury variety |
100 g | potato flour |
1 | egg yolk |
1 tbsp | butter |
salt | |
nutmeg |
Instructions
Peel and quarter the potatoes and cook in salted water until tender. Drain and place back on the hob, heat switched off, until all the steam has evaporated. Pass the still hot potatoes through a potato ricer. Allow to cool slightly, then stir in the egg yolk, potato flour and a knob of butter. Season with salt and nutmeg. Knead until well combined.In a wide saucepan, bring salted water to a light boil. Shape a piece of the dough to a dumpling and place in the simmering water to see, if it keeps together. If it falls apart, knead a little more potato flour into the dough.
Shape all the dough with your hands into dumplings, the size of your choice, something in between the size of golf balls and tennis balls.
Gently drop the dumplings, a few at a time, into the water. As soon as they rise to the surface, leave them for another 5 minutes in the water, then remove them with a slotted spoon, draining well.
Potato dumplings are a perfect side dish for pork roast or braised beef, if ever there is much sauce to mop up.
