- Ingredients
- 3 large lemons
- 2 cups sugar
- 1/4 cup butter, melted
- 3 eggs, slightly beaten
Shred rind and squeeze juice from lemons. Rub sugar with shredded lemon rind. Add lemon juice to sugar and lemon rind. Add butter to mixture. Add eggs to mixture. Boil until bubbly (dont over boil as it will make the butter sugary). Dont panic, it thickens as it cools.
