Ingredients
4 medium | duck breasts |
1 kg | potatoes, peeled and sliced |
butter, in small pieces | |
2 bulb(s) | garlic, large |
1 tbsp | juniper berries |
1 tsp | peppercorns |
4 leaves | bay |
500 ml | stock, vegetable, chicken or duck |
salt and fresh ground pepper, to taste |
Instructions
Melt some butter in a casserole dish and add half the potatoes. Add more butter, the peppercorns, juniper, bay leaves and seasoning. Layer the remaining potatoes and add the stock.Preheat the oven to Gas Mark 6, 200°C, 400°F.
For a more intense garlic flavour, separate the cloves and spread them around. For a lesser flavour, halve the bulbs horizontally – the more decorative alternative. Bring to a boil and simmer for 10 minutes before placing in the oven for about 45 minutes.
Pan fry the duck breasts about 20 minutes before needing to serve. Score the skin and add a little salt and fry skin-side down on a medium heat for 4 minutes. Turn over and fry for another 1½ minutes.
Add the breasts and any juices to the casserole dish and cook for 20 minutes. Serve with baby cauliflower or vegetables of choice.
