Garlic oil recipe details
This is a basic garlic oil that can be used as a dipping sauce for bread, the oil half of an Italian vinaigrette, or as the base for sauteeing Mediterranean style. If you use it for the latter though, you may want to omit the herbs and add the extra virgin olive oil unless your pan is non-stick or you do not mind burned liitle flecks of oregano or parsley!

Ingredients
Makes: 3 /4 cup- 1 clove garlic
- 1/2 cup regular or virgin olive oil
- 1/4 cup extra virgin olive oil (optional)
- 1/2 tsp oregano
- 1/2 tsp basil
Preparation method
Prep: 3 mins | Cook: 1 min | Extra time: 10 mins, cooling1. Peel and chop garlic clove, do not mince.
2. In a heated medium frying pan, slowly pour regular olive oil. If the oil begins to splatter, immediately reduce heat or remove pan from burner.
3. Place garlic into frying pan. Wait for garlic to begin sizzling, but do not brown. When the garlic begins to sizzle slightly (about 1 minute), turn the heat off the stove, but leave the pan on the burner.
4. If desired, mix in the oregano and basil. Allow mixture to cool slightly (about 10 minutes).
5. Pour mixture into container, and mix in the 1/4 virgin olive oil. Allow mixture to sit in container in a refrigerator until ready to be used. For best results, allow mixture to sit in the refrigerator at least overnight to allow flavors to blend.
