Garlic-Herb Roast Pork

A sage and garlic paste flavor this roast that is flash roasted to be juicy on the inside. The pork can be marinated a day ahead of time so you can have dinner together ah hour after you get home from work.

Ingredients
Serves: 6- 4 cloves garlic, minced
- 1 tablespoon kosher salt
- 1 tablespoon minced fresh sage
- 2 teaspoons minced fresh rosemary leaves
- 3/4 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 2 pounds boneless pork loin roast
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 40 mins, resting1. Take all of the ingredients except for the pork, and mash into a paste using a mortar and pestle, or the back of a knife on a cutting board. Rub all over the pork loin, then set into a roasting pan. Let stand at room temperature for 30 minutes.
2. Preheat oven to 450 degrees F.
3. Roast the pork in the preheated oven for 15 minutes, then turn heat down to 300 degrees F, and roast 15 minutes more. Do not open the oven or you’ll let all the heat out and it will take quite a bit longer.
4. When the pork has cooked a total of 30 minutes, take the temperature. Remove the pork from the oven when it has reached at least 145 degrees F on a meat thermometer. Remove from the oven, cover with aluminum foil, and let rest in a warm place for 10 minutes before slicing.
