Pork loin is cooked to juicy perfection under a Parmesan cheese crust seasoned with basil, rosemary and thyme.

Ingredients
Serves: 10- Spice Rub
- 2 tablespoons cracked black pepper
- 2 tablespoons grated Parmesan cheese
- 2 teaspoons dried basil leaves
- 2 teaspoons rubbed rosemary
- 2 teaspoons dried thyme leaves
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 (3 pound) boneless pork loin roast
Preparation method
Prep: 10 mins | Cook: 1 hour 15 mins | Extra time: 10 mins, resting1. Combine rub ingredients in a small bowl, then rub all over the pork loin. Place onto a roasting pan, and let stand at room temperature 30 minutes while the oven preheats.
2. Preheat oven to 350 degrees F.
