Ingredients
Serves: 6- 1/4 cup olive oil
- 1 tablespoon soy sauce
- 2 garlic cloves, minced
- 2 teaspoons lemon zest
- 1 teaspoon fennel seed, crushed
- 1/2 teaspoons salt
- 1/2 teaspoons pepper
- 1/2 teaspoon ground allspice
- 2 (3/4 pound) pork tenderloins
- 1 tablespoon olive oil
Preparation method
Prep: 10 mins | Cook: 20 mins | Extra time: 8 hours, marinating1. Place olive oil, soy sauce, garlic, lemon zest, fennel seed, salt, pepper, and allspice into a large plastic resealable bag. Set pork in the bag, seal, and refrigerate for 8 hours to marinate.
2. Preheat oven to 450 degrees F.
3. Pour olive oil into a large cast-iron skillet and set over medium heat. Add the pork and cook until browned on all sides.
4. Transfer the pork in the skillet into the oven. Bake for about 20 minutes, until pork reaches an internal temperature of 145 degrees F. Remove from oven and let stand for 5 minutes, then slice and serve.
