Ingredients
230 g | dried red beans, soaked for 12 hours |
6 clove(s) | garlic, minced |
200 g | rice |
3 tbsp | olive oil |
1 medium | onion, chopped |
salt. to taste |
Instructions
Drain the soaking beans and place them in a saucepan. Cover with some water. Bring to a boil and skim off the foam.Add garlic and simmer, uncovered, until the beans are tender but not mushy, about 75 minutes.
About forty-five minutes into the bean-simmering, start cooking the rice.
Sauté the onion in the oil until soft and golden.
When the beans are tender, drain them, reserving the liquid.
Combine the beans, the onion and the rice in one pan and add a bit of the reserved liquid to moisten the rice. Salt to taste.
