Fruity treat cake recipe details
Ingredients
For the cake: | |
125 ml | honey |
125 ml | vegetable oil |
2 medium | eggs, beaten |
½ tsp | vanilla extract |
75 g | spelt or wholemeal flour |
150 g | plain flour |
1 tsp | baking soda |
¼ tsp | salt |
For the topping: | |
125 ml | maple syrup, good quality only |
75 g | raisins or sultanas |
75 g | dried apricots, chopped |
75 g | dried pineapple, finely chopped |
2 tbsp | sesame seeds |
½ tsp | vanilla extract |
½ tsp | ground cinnamon |
½ tsp | ground nutmeg |
4 tbsp | plain flour |
35 g | almonds, finely chopped |
Instructions
Preheat the oven to Gas Mark 4, 180ºC, 350ºF. Thoroughly grease a 9×9-inch, 22cm square baking dish or equivalent.In a bowl, whisk together the honey, oil, eggs and vanilla.
In a separate bowl, mix together the flour, soda, and salt and mix them slowly into the liquid ingredients until thoroughly blended. Spread evenly into the tin and bake for 15 minutes.
In the meantime, mix together all the topping ingredients until well distributed. Carefully place on top of the part-cooked cake. It is likely that the centre of the cake may sink, especially under the weight of the topping but it will come back.
Return the cake to the oven for a further 20 minutes or until the topping is lightly browned and the cake feels firm.
Cool completely in the tin. Slice when quite cold, as slices about ¾-inch, 18-20mm thick and then divide each slice to serve two persons.
