Fruited pound cake recipe details
Ingredients
280 g | granulated sugar |
230 g | butter, softened |
120 g | cream cheese |
6 medium | eggs |
1 tbsp | orange peel, grated |
1 tbsp | vanilla extract |
1 tsp | rum extract |
300 g | flour |
½ tsp | baking powder |
120 g | candied cherries, chopped |
60 g | raisins |
For the glaze: | |
100 g | powdered sugar |
½ tsp | rum extract |
4 tbsp | milk |
Instructions
Heat oven to 180°C.Combine sugar, butter and cream cheese in a bowl and beat until creamy, 2-3 minutes. Add eggs, orange peel, vanilla, brandy extract and rum extract. Continue beating until well mixed. Reduce speed to low and add flour and baking powder. Beat until well mixedand then stir in candied cherries and raisins by hand.
Spoon batter into greased springform and bake for 60-70 minutes or until toothpick inserted in center comes out clean. Remove from oven, cool 10 minutes and then remove from springform. Cool completely.
Glaze:
Combine sugar, rum extract and enough milk for desired glazing consistency in a small bowl. Drizzle over cooled cake.
