Ingredients
For the sponge roll: | |
3 medium | eggs |
85 g | caster sugar |
110 g | flour |
For the Filling: | |
230 g | gooseberries, red or black currants or blackberries |
50 g | sugar |
Instructions
Preheat oven to 200°C.Sponge roll:
Whisk together eggs and sugar and gently fold in the flour. Turn onto a greased and baking tin and bake for about 10 minutes until firm.
Fruit filling:
Place the fruit in water and poach until tender. Drain well. Combine fruit and sugar in a blender and process until smooth. Put aside to cool.
Fruit roll:
Turn sponge roll out onto grease-proof paper and spread with the fruit purée. Roll lengthways and place on a serving dish.
