Red currant muffins recipe details
Ingredients
150 g | flour |
100 g | sugar |
2 tsp | baking powder |
½ tsp | salt |
1 medium | egg, beaten |
120 ml | milk |
50 ml | vegetable oil |
300 g | red currants |
½ tsp | cinnamon |
Instructions
Preheat oven to 200°C.Combine flour, sugar, baking powder, cinnamon and salt in a large bowl and make a well in centre of mixture.
Combine egg, milk and oil and add liquid mixture to dry ingredients. Stir until well combined. Gently stir in red currants.
Spoon into greased muffin pans filling 2/3 full and bake at for 20 to 25 min.
