Fruit puff pancake recipe details
- Ingredients
- 1/4 cup melted margarine
- 3 eggs
- 1/2 cup flour
- 1/8 cup sugar
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 3 tart cooking apples (also good with peaches, blueberries, or blackberries – but not strawberries)
- 2 Tablespoons butter
- Cinnamon
- Sugar
Whisk the margarine, egg, flour, sugar, milk, salt, and baking powder together. Refrigerate overnight, covered. Peel and slice apples. Saute apple slices in skillet in butter. When tender, add sugar and cinnamon to taste. Place apples in bowl and refrigerate until ready to reheat.
The next morning, whisk batter and pour into a greased (or sprayed with non-stick cooking spray) 8- or 9-inch pie dish. Heat fruit and pour into baking dish, spreading evenly. Dust top of batter with cinnamon/sugar mixture and place in a preheated 400-degree oven. Bake for 20 minutes or until done in center.
To serve, cut into fourths and top with frozen vanilla yogurt or warm maple syrup.
Variation: A great brunch is to eliminate the fruit and the sugar in the batter. Instead, use your choice of sauteed vegetables and top the batter with grated cheese and bake. Yummy!
