Fruit platter and dip recipe details
Ingredients
Fruit: | |
1 | pineapple, rind removed, cut into bite-sized pieces |
1 | watermelon, cut into bite-sized pieces |
1 | honeydew melon, cut into bite-sized pieces |
seedless grapes, red or green | |
For the Dip: | |
70 g | sugar |
4 tsp | cornstarch |
½ tsp | salt |
240 ml | pineapple juice |
3 tbsp | lemon juice |
2 medium | eggs, beaten |
100 g | cream cheese, Mascarpone |
Instructions
Prepare fruit.Prepare the dip. In a bowl, beat eggs and set aside.
Combine sugar, cornstarch and salt in a saucepan and blend in fruit juices. Cook, stir constantly until clear, about 5-8 minutes.
Slowly pour cooked mixture over beaten eggs, beating briskly. Return mixture to saucepan and cook over low heat, stirring constantly 3-5 minutes or thickened. Remove from heat and cool for 5 minutes.
Beat softened cream cheese in a small bowl then blend into cooled mixture. Chill thoroughly.
To serve, arrange fruit on a large fruit platter and place dip in the middle of fruit.
