Ingredients

Fruit:
1  pineapple, rind removed, cut into bite-sized pieces
1  watermelon, cut into bite-sized pieces
1  honeydew melon, cut into bite-sized pieces
seedless grapes, red or green
For the Dip:
70 g sugar
4 tsp cornstarch
½ tsp salt
240 ml pineapple juice
3 tbsp lemon juice
2 medium eggs, beaten
100 g cream cheese, Mascarpone

Instructions

Prepare fruit.

Prepare the dip. In a bowl, beat eggs and set aside.

Combine sugar, cornstarch and salt in a saucepan and blend in fruit juices. Cook, stir constantly until clear, about 5-8 minutes.

Slowly pour cooked mixture over beaten eggs, beating briskly. Return mixture to saucepan and cook over low heat, stirring constantly 3-5 minutes or thickened. Remove from heat and cool for 5 minutes.

Beat softened cream cheese in a small bowl then blend into cooled mixture. Chill thoroughly.

To serve, arrange fruit on a large fruit platter and place dip in the middle of fruit.
