Ingredients
For the Custard: | |
6 large | eggs, yolks only |
225 g | sugar |
drained syrup from can of peaches | |
milk to make up to 1 litre together with peach syrup above, plus a little to mix with cornflour | |
2 tbsp | cornflour |
2 tsp | vanilla essence |
For the fruit salad: | |
1 large | can of peaches in thick syrup, drained, reserve syrup (see above) |
2 | bananas, peeled and sliced |
2 | apples, cored and thinly sliced |
2 | pears, cored and thinly sliced |
3 | oranges, peeled and segmented |
1 jar(s) | cocktail cherries, drained |
1 tsp | fresh lemon juice |
sweetened whipped cream, as topping | |
broken meringue, as topping, optional |
Instructions
To make the custard: place yolks and sugar in a pan. Stir in cornflour mixed with a little milk and beat well. Add the milk and syrup and stir thoroughly. Cook over a low heat and bring to a boil. Continue to boil while stirring for about 2 minutes until it thickens. Remove from heat and allow to cool.Place all the fruit, apart from the peaches into a bowl. thinly slice two or three peach halves and add to the fruit mixture. Pour in the lemon juice and mix thoroughly.
Add the fruit to the custard and divide between the servings.
Slice the remaining peach halves and decorate the tops of the custard.
Serve chilled, in dessert glasses. Top with sweetened whipped cream or meringue, as desired.
