Fruit and nut chicken salad recipe details
Ingredients
250 g | chicken breast, boneless, skinless, fried, diced |
50 g | red grapes, seedless |
50 g | pineapple, crushed, rained |
¼ | cantaloupe, seeded, peeled, cut into wedges |
2 tbsp | cashews |
olive oil | |
lettuce | |
salt and pepper, to taste |
Instructions
Combine chicken, grapes and pineapple. Add olive oil, season with salt and pepper and stir gently to coat.Place lettuce leaves on each serving plate. Arrange cantaloupe wedges over lettuce and spoon chicken salad over cantaloupe wedges. Sprinkle with cashews.
