- 4 eggs
- 1/4 cup half & half
- pinch of salt
- small onion, sliced top to bottom
- 1/2 red pepper and 1/2 green pepper, sliced lengthwise
- 2 Tablespoons oil
- 3/4 shredded Monterey jack cheese
- couple cloves of fresh garlic
Whisk together eggs, half & half, and salt. Set aside. In small 8- or 9-inch skillet saute onion, peppers and garlic in oil. Cook until just tender, add egg mixture, sprinkle with cheese. Cover pan and cook on low heat approximately 10 minutes until eggs are set. Cut in half to serve.
