Frittata di zucchini recipe details
- Ingredients
- 2 Tablespoons olive oil
- 10 large eggs
- 1 large clove of garlic
- 3 zucchini (1/4-inch slices)
- 1/2 teaspoon of salt
- Flour
- 2 Tablespoons minced Italian parsley
- 1/8 teaspoon white pepper
- 1/2 stick unsalted butter
Heat oil in large skillet over medium heat. Add garlic and saute 1 to 2 minutes and discard. Dredge zucchini lightly in flour, shake off excess. Stir fry until golden. Drain as much of the oil off as possible. Sprinkle with parsley, salt and white pepper. Remove from heat.
Melt butter in heavy 10-inch skillet over high heat. Quickly combine eggs, salt, and remaining pepper. As butter foams, add eggs. Reduce heat; add zucchini mixture evenly over eggs. Fry until golden brown.
