Fried squid curry recipe details
Ingredients
2 tbsp | grapeseed oil |
500 g | prepared squid, including tentacles if liked |
For the sauce: | |
1 large | onion, finely chopped |
4 clove(s) | garlic, crushed |
8 | curry leaves |
5 | cm piece of cinnamon |
1 stalks | lemon grass, very finely chopped |
½ tsp | ground ginger |
½ tsp | salt |
1 tsp | soft brown sugar |
1 tsp | turmeric |
1 tsp | chilli powder |
1 tbsp | Sri Lankan curry powder, see database |
2 tbsp | lime juice |
600 ml | coconut milk |
Instructions
Place all the ingredients for the sauce into a large heavy-based saucepan, stir well and bring to the boil, then reduce heat to low and simmer for 45 minutes, stirring occasionally.Heat the oil in a non-stick pan and fry the squid rings and tentacles over a medium-high heat for 2 minutes, stirring. Remove with a slotted spoon and add to sauce. Simmer the curry for 5 minutes. Taste and add more lime juice if necessary. Serve with boiled rice. Cut the squid tubes into 2.5 cm rings if using whole. Defrost fully if using frozen.
