Ingredients

2 tbsp grapeseed oil
500 g prepared squid, including tentacles if liked
For the sauce:
1 large onion, finely chopped
4 clove(s) garlic, crushed
8  curry leaves
5  cm piece of cinnamon
1 stalks lemon grass, very finely chopped
½ tsp ground ginger
½ tsp salt
1 tsp soft brown sugar
1 tsp turmeric
1 tsp chilli powder
1 tbsp Sri Lankan curry powder, see database
2 tbsp lime juice
600 ml coconut milk

Instructions

Place all the ingredients for the sauce into a large heavy-based saucepan, stir well and bring to the boil, then reduce heat to low and simmer for 45 minutes, stirring occasionally.

Heat the oil in a non-stick pan and fry the squid rings and tentacles over a medium-high heat for 2 minutes, stirring. Remove with a slotted spoon and add to sauce. Simmer the curry for 5 minutes. Taste and add more lime juice if necessary. Serve with boiled rice. Cut the squid tubes into 2.5 cm rings if using whole. Defrost fully if using frozen.
