Fried halibut with pasta recipe details
Ingredients
500 g | pasta |
8 | sage leaves |
2 | shallots, chopped |
4 tbsp | olive oil |
2 tbsp | sherry vinegar |
1 tsp | mustard |
100 ml | fish stock |
200 ml | single cream |
1 tbsp | cold butter |
salt and freshly ground black pepper | |
1 kg | halibut fillet with skin, cut into 4 pieces |
Instructions
In a saucepan, heat 1 tablespoon of oil. Sauté the shallots until lucent. Stir in the vinegar and the mustard. Simmer for 2-3 minutes. Pour in the stock and the cream. Simmer until the sauce has thickened. Stir in the butter and season to taste with salt and pepper.Cook the pasta in salted water until al dente.
Season the fish with salt. In a large pan, heat the remaining oil. Fry the fish on the skin for 2-3 minutes. Add the sage leaves and fry the fish from the other side until no longer glassy and just cooked through.
Drain the cooked pasta and divide the pasta onto warmed serving plates. Top with the fish and drizzle over the mustard sauce.
