Fried Eggs with Polenta and Truffles recipe

Ingredients
8 slice(s) | cornmeal polenta |
3 tbsp | olive oil |
2 tbsp | butter |
1 | white truffle |
8 medium | eggs |
salt and pepper, to taste |
Instructions
Prepare the polenta, let cool and cut it into 2 cm thick slices. Grill the polenta and place into serving dish.
Melt butter and oil in a frying pan. Fry the eggs, two at a time.
To serve, slide 2 eggs onto each serving of polenta, season with salt and pepper, and then cover with plenty of very thinly sliced truffle.
