Fresh codfish daudet recipe details
Ingredients1. Codfish fillets (2 pounds)
2. bay leaves (2)
3. boiling potatoes (1 pound)
4. milk (2c)
5. garlic, peeled (5 cloves)
6. nicoise olives (2tbsp)
7. freshly ground white pepper (to taste)
8. salt (to taste)
9. virgin olive oil (2c)
10. fresh thyme (3 sprigs) or dried thyme (1/8tsp)
11. water (2c)
Method of preparation
1. Take a pot of 4 quart, mix fish, bay leaves, thyme, garlic, water, milk in it. Keep this mixture to simmer for about 12 minutes. Take potatoes; boil them in salted water until they become soft. Then drain the potatoes, peel them and then mash them.
2. Now take out the fish from the broth and mix it with mashed potatoes. To make the mixture light, add cooking liquid in it. Mix olive oil in mixture in additions and mix it well after each addition.
3. When all oil gets mixed then season the mixture with pepper and salt. Then take serving bowls or a platter, place the mixture on it and serve garnish it with olives and then serve it.
