Codfish omelet recipe details
Ingredients1. Shredded codfish, scalded and drained (1c)
2. mashed potatoes (2c)
3. corn oil (1tbsp)
4. pepper (to taste)
5. eggs, separated (2)
6. parsley(for decorating)
Method of preparation
1. Take a bowl, add codfish, pepper and mashed potatoes in it and mix them well. Now mix the lightly beaten egg yolks in it and then mix egg whites in it.
2. Take a frying pan of medium size, place it over heat and then heat corn oil in it. Now spread the codfish mixture in the pan, make thin layer of this mixture and cook it until it gets brown color.
3. Then take off the frying pan from heat and place the codfish omelet in a platter and then decorate it with parsley. Serve it with Spanish sauce or fried tomatoes.
