Fresh berries with creme anglaise recipe details
- Ingredients
- Berries such as blueberries, raspberries, blackberries, or strawberries (any fruit, such as peaches, will do)
- 2-1/2 cup milk
- 6 egg yolks
- 1/4 cup sugar
Scald the milk and let cool. Mix yolks and sugar with wire whisk until thick and pale. Mixing constantly, slowly add milk. Transfer mixture to double boiler and cook, stirring constantly. Do not let boil. When custard is thick enough to coat spoon, remove immediately from heat and let cool. (You can speed up the process by placing saucepan in pan with ice water.) Stir the mixture frequently to ensure a smooth texture.
Makes:approximately 2-1/2 cups sauce. Approximate prep. time:15 minutes.
