- Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 2 farm-fresh eggs
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1-1/2 Tablespoons buttermilk
- 1/2 teaspoon vanilla
- 1 cup chopped pecans
- 1 Tablespoon flour
- 1-1/2 Tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1 cup peeled and grated cooking apples
Beat shortening until creamy, then gradually add 1 cup sugar, beating well. Add eggs, one at a time, beating after each addition. Add 2 cups flour and the salt, mixing well. Dissolve baking soda in the buttermilk, then add to the flour mixture, beating well. Stir in vanilla.
Combine pecans, 1 Tablespoon flour, 1-1/2 Tablespoons sugar, and cinnamon. Add the pecan mixture and the apple to the batter; stir well. Pour into a greased and floured 9 x 5 x 3-inch loaf pan and into 3 mini loaf pans. Bake at 350 degrees for 1 hour for the single pan or 40 minutes for the mini loaves. Remove from pans and cool on a wire rack.
