French style chocolate mousse recipe details
Ingredients
120 g | baking chocolate, unsweetened , roughly chopped |
3 large | eggs, yolks only – reserve whites |
1 large | egg, white only |
115 g | caster sugar |
2 tbsp | butter, at room temperature |
1 pinch(es) | salt |
Instructions
Uses raw eggs; pasteurise them in advance if planning to serve to vulnerable group – see specific recipe submitted.Beat egg yolks with sugar in a bowl, until pale.
Place chocolate in a separate bowl with 3 tbsp of water and melt over hot water in a saucepan over a low to medium heat. Do not allow water to touch the bottom of the bowl. Alternately melt in microwave for about 30 seconds.
Remove chocolate from heat and stir in butter until it melts. Allow to cool completely and stir in the egg yolks.
Whisk egg whites (all 4) in a clean bowl with the salt until firm. Stir whites into chocolate mixture.
Pour into individual ramekins or dessert glasses and refrigerate for about 3 hours until set. Serve chilled.
Options: shave a few squares of dark chocolate (about 80% cocoa solids) and mix that in just after folding in the egg whites. Replace unsweetened chocolate with good milk chocolate or white chocolate – omit the sugar from the recipe as it would otherwise be exceptionally sweet – for a variation of taste.
