French onion soup recipe details
Ingredients
4 medium | onions, finely sliced |
2 tbsp | butter |
1 tbsp | Calvados |
1 l | chicken broth |
salt and freshly ground black pepper, to taste | |
4 slice(s) | white bread |
150 g | freshly grated Swiss cheese, e.g. Gruyère |
Instructions
Preheat the oven to 150°C.Cook onions with butter in a saucepan over medium heat, stirring constantly, until soft and golden, about 15 minutes.
Remove the pan from heat and stir in the Calvados. Return to heat and continue cooking until the Calvados has evaporated, about 30 seconds. Add stock and bring to a boil. Reduce the heat and simmer for approximately 5 minutes. Season to taste with salt and pepper.
Ladle the soup into 4 ovenproof soup bowls. Cover each portion with a slice of bread and sprinkle with the grated cheese. Bake for about 10 minutes or until golden brown and bubbling.
Serve immediately, but be careful, the soup is very hot, as well as the bowls!
