Foxes' special eggs recipe details
- Ingredients
- 1 cup half & half (about 1/2 inch in a 7- or 8-inch frying pan)
- 1 teaspoon butter or margarine
- 4 extra large or jumbo eggs
- pinch freshly ground pepper
- dash cayenne pepper
- 2 Tablespoons shredded sharp cheddar cheese
- 2 English muffins
Heat the half & half with butter or margarine in a non-stick frying pan. Slide the eggs into the hot cream and keep separate. Sprinkle the pepper over the yolks. When the whites begin to set, add the shredded cheese to each yolk. Finish to desired doneness (approximately 10 minutes).
Place toasted muffin halves on the serving plate and top with the eggs. Spoon a small amount of the hot cream mixture over the tops.
