Ingredients

1	orange (Seville orange)
1	lemon
1 small	grapefruit
1	lime
850 ml	water
1 ½ kg	sugar

Instructions

You will need a very large glass bowl as close to the size of the microwave dish as possible.

Wash the fruit well (oranges and lemon), cut in half, squeeze the juice and remove the pips. Cut the remains of the fruit into pieces the size you like in marmalade. Place the pips in a piece of muslin, tied with some string.

Place the juice, fruit, water and muslin bag into the microwaveable bowl and cover with microwaveable cling film. Cook on ‘high’ for 18 – 20 minutes until the fruit is soft. Remove the muslin bag.

Stir in the sugar and heat on ‘high’ until the sugar is dissolved, stirring regularly, and then bring to the boil.

Cook open on ‘high’ for 20 – 25 minutes or until a set is obtained. Allow to cool slightly before potting in the usual way.

Makes approximately 2,25kg marmalade.
