Florida rice and peas recipe details
Ingredients
100 g | dried kidney beans |
350 ml | coconut milk |
2 | spring onion, green part only, finely sliced |
1 sprig(s) | thyme, fresh, leaves only finely chopped |
1 clove(s) | garlic, finely chopped |
225 g | long grain rice |
½ tsp | salt |
½ tsp | sugar |
Instructions
Soak the beans in a bowl of water overnight but preferably for at least 12 hours. Drain, rinse well and allow to drain.Combine the beans and coconut milk in a saucepan and simmer until the beans are tender. Add the remaining ingredients and cook covered for about 15 minutes. Check that the rice is tender, remove from heat and leave covered for about 10 minutes.
Drain any surplus liquid and serve immediately.
