Float away oatmeal muffins recipe details
- Ingredients
- 1 cup dry oatmeal
- 1 cup buttermilk
- 1 cup flour
- 1/2 teaspoon salt
- 1-1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 egg
- 1/2 cup dark brown sugar
- 1/4 cup melted butter
Preheat the oven to 400 degrees and prepare muffin tins. Place the oatmeal in a bowl and pour the buttermilk over the oatmeal. Let stand while sifting the flour, salt, baking powder, and baking soda.
Beat the egg into the oatmeal mixture, then beat in the brown sugar. Stir in the sifted dry ingredients and then melted butter. Pour batter into greased muffin tins and bake about 18 minutes.
