Flan de queso recipe details
- Ingredients
- 1 cup sugar (for the “topping”)
- 2 eggs
- 1 teaspoon vanilla
- One 8-ounce package cream cheese, softened
- One 14-ounce can sweetened condensed milk, such as Eagle Brand
- One 12-ounce can evaporated milk, such as Carnation or Pet Milk
Make the topping first. Have a 2-quart casserole dish standing by. Using a heavy skillet, melt the 1 cup of sugar over medium-high heat. When sugar is melted and forms a golden color syrup, carefully pour it into the casserole dish. Turn the dish to coat bottom and sides with syrup. Work quickly, as the sugar syrup hardens very fast. Set the casserole dish aside.
Combine the eggs, vanilla, and softened cream cheese in the mixing container of a blender (you may use a mixer or food processor). Add the two cans of milk and blend well. Pour the mixture into the waiting casserole dish. Place the casserole dish in a larger pan which contains 1 inch of hot water.
Bake in a 350-degree oven for 50 minutes. Remove casserole from the hot water pan and let cool. Chill before removing the flan. To remove flan, slide a thin knife around all edges. Invert over serving dish and tap bottom of flan dish lightly. After flan is removed, scoop out any topping that remains in the dish and pour it over the flan.
Note:There will be a hard layer of sugar residue that will remain in the baking dish. You will have to soak the dish in hot, soapy water to get it out.
