Ingredients

2  steaks, sirloin or fillet
butter
100 ml brandy, warmed
1 tbsp shallots, finely chopped
1 tbsp chives, chopped
½ tsp Worcestershire sauce
½ tsp dry mustard
salt, to taste
½ ml dry red wine

Instructions

Pound pepper into both sides of the steaks. In a skillet brown the meat in some butter on both sides. Pour brandy over the meat an ignite. But take care, that you don’t burn your hair! When the flame dies, remove the meat, salt the steaks lightly and keep them warm.

Add the remaining ingredients to the pan juices and simmer for 2 to 3 minutes. Stir some knobs of ice cold butter in the gravy. Pour the sauce over the steaks and serve immediately.
