Fish sticks recipe details
Ingredients
1 kg | white cod fillets, chopped |
2 large | eggs, separated |
150 g | bread crumbs |
3 tbsp | dried thyme |
1 tsp | salt |
1 tbsp | olive oil |
100 g | flour |
1 tbsp | lemon juice |
Instructions
Preheat oven to 200°C. Grease a large baking tray and set aside.Combine the chopped fish with one of the egg whites, stirring until mixture just holds together. Set aside.
In another small bowl, combine the bread crumbs, thyme, salt and oil and mix well.
Place the flour in a small bowl and set aside.
Combine the remaining egg yolks and whites with the lemon juice in another bowl and set aside.
Roll small amounts from the fish mixture into sticks.
Dip into the flour and roll until well coated, then dip them in the egg and lemon mixture. Then dip them in the bread crumb mixture until completely coated and place on the prepared baking tray.
Bake for about 20 minutes, turning the sticks over after about 10 minutes. Serve warm.
