Ingredients
250 g | fish of your choice, cooked, diced (leftovers) |
2 | spring onions, sliced |
For the dressing: | |
1 tsp | mustard |
1 dash(es) | lemon juice |
1 tbsp | parsley |
½ tsp | instant vegetable stock |
3 tbsp | single cream |
salt and pepper | |
1 tbsp | vinegar |
To garnish: | |
some | lemon slices |
Instructions
Place the fish and spring onions into a bowl.
Mix the mustard, lemon juice, vinegar and single cream, stir in the parsley and vegetable stock and whisk until well combined. Season to taste with salt and pepper. Pour the dressing over the fish and mix carefully. Allow to stand for 15 minutes.
Serve garnished with lemon slices.
