Fish ragu for pasta recipe details
Ingredients
500 g | fis, cleaned, cut in strips or small pieces. |
most suitable fish:octopus, squid, cuttlefish, prawns, clams | |
200 g | tomatoes, chopped |
1 small | carrot |
1 clove(s) | garlic |
20 g | fresh parsley, chopped |
500 ml | olive oil |
100 g | mushrooms |
60 ml | dry white wine |
salt and pepper, to taste |
Instructions
Combine chopped onion, carrot, garlic and parsley in a bowl. Stir well.Heat the olive oil in a large saucepan, add the vegetable mix and mushrooms. Cook over medium until the vegetables begin to get tender.
Add the wine, then the tomatoes, the remaining ingredients and let cook over a very low heat for about 40 minutes.
Add the fish and cook until done. Stir occasionally.
Serve this sauce with spaghetti or linguine.
