Fish in sherry and cream recipe details
Ingredients
8 small | fish fillets |
2 tbsp | spring onion, finely chopped |
1 tbsp | onions, grated |
60 g | butter |
2 | egg yolks, lightly beaten |
1 ½ tbsp | lemon juice |
125 ml | dry sherry |
250 ml | cream |
salt and pepper |
Instructions
Sauté onions in butter until lightly browned. Add lemon juice, sherry, fish, salt and pepper. Cook gently until done, about 15 minutes, and put aside and keep warm.Beat egg yolks and cream, cook, stirring constantly, until thick, do not boil. Pour over warm fish and serve.
