Ingredients

8 small fish fillets
2 tbsp spring onion, finely chopped
1 tbsp onions, grated
60 g butter
2  egg yolks, lightly beaten
1 ½ tbsp lemon juice
125 ml dry sherry
250 ml cream
salt and pepper

Instructions

Sauté onions in butter until lightly browned. Add lemon juice, sherry, fish, salt and pepper. Cook gently until done, about 15 minutes, and put aside and keep warm.

Beat egg yolks and cream, cook, stirring constantly, until thick, do not boil. Pour over warm fish and serve.
