Ingredients

850 g potatoes, peeled and sliced
salt and pepper
2 small courgettes, sliced
3 tbsp oil
4 sprig(s) parsley, chopped
3 sprig(s) chervil, chopped
12  fish fingers, frozen
175 ml milk
1 tbsp butter
nutmeg
250 g Hollandaise sauce, homemade or store-bought

Instructions

Cook the potatoes in salted water until soft. Drain.

In a pan heat 1 tablespoon of oil. Stir-fry the courgettes until slightly golden. Season with salt and pepper. Remove from the pan. Add 2 tablespoons of oil and fry the fish fingers until golden and crispy all around.

In a saucepan heat the milk and 1 tablespoon of butter. Mash the potatoes, adding the milk mixture. Season to taste with salt, nutmeg and pepper. Layer the mashed potatoes, courgettes and the fish fingers into a casserole dish. Coat with the Hollandaise sauce.

Bake in the preheated oven at 180°C for 20 minutes.
