Finnish oven pancakes recipe details
- Ingredients:
- 6 eggs
- 1-1/4 cups flour
- 1-1/4 cups cottage cheese
- 1-1/2 Tablespoons sugar
- 1/2 teaspoon salt
- 1-1/4 teaspoons baking powder
- 1/2 Tablespoon melted butter
- 2-1/4 cups milk
- Cider Sauce:
- 1 cup sugar
- 2 Tablespoons cornstarch
- 1/2 teaspoon pumpkin pie spice
- 2 cups cider/apple juice
- 2 teaspoons lemon juice
- 1/4 cup butter
Preheat oven to 425 degrees. Melt one Tablespoon butter in each of the two 8-inch saute pans. Put eggs, cottage cheese, and milk in blender. Blend until smooth. Add dry ingredients together and then add to the milk-egg mixture. Pour equal amounts into saute pans and bake approximately 20 minutes until well-browned. They will be puffy and “jiggly” — not set. Let cool five to ten minutes. It will sink, leaving high sides. Cut into wedges.
Cider Sauce: Combine all ingredients except for butter in a sauce pan and cook over medium heat until thick. Boil one minute. Take off heat and add butter.
