Fast shrimp jambalaya with wild rice recipe details

Ingredients
Serves: 4- 2 slices bacon
- 1 ounce turkey sausage, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 1 3/4 cups chicken stock
- 1 (14 ounce) can tomatoes
- 1/4 cup chopped fresh parsley
- 1 (7 ounce) box wild rice
- 1/2 teaspoon hot pepper sauce
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1/4 teaspoon pepper
- 12 ounces medium shrimp, peeled and deveined
Preparation method
Prep: 15 mins | Cook: 45 mins1. Place bacon in a large cold skillet, then place over medium heat. Cook for about 10 minutes, flipping frequently, until bacon is crispy. Drain on a paper towel and reserve. Saute the sausage in the rendered bacon fat over medium heat for about 5 minutes to brown, then remove to paper towel.
2. Cook the onion, garlic, green pepper, and celery in the bacon and sausage fat remaining in the skillet for about 5 minutes until tender. Then add remaining ingredients, except for shrimp. Bring to a boil, cover, and simmer for 25 minutes to cook rice.
3. Once rice has absorbed the liquid, combine mixture with the sausage, bacon, and the shrimp. Cook for 5 more minutes until shrimp turn pink. Serve.
