Fast minestrone soup with garlic croutons recipe details

Ingredients
Serves: 4- 2 tablespoons olive oil
- 1/4 pound bacon, finely chopped
- 1 pound zucchini, finely chopped
- 2 celery stalks, finely chopped
- 1 small carrot, finely chopped
- 1 onion, finely chopped
- 1 bay leaf
- 3 cloves garlic, finely chopped
- Salt and pepper
- 4 cups chicken stock
- 1 (15 ounce) can kidney beans, rinsed
- 1 (15 ounce) can tomato puree
- 1/4 pound penne pasta
- 1/4 cup chopped basil leaves
- 2 tablespoons butter
- 4 thick slices Italian bread
- 1/2 cup grated Parmesan cheese
Preparation method
Prep: 15 mins | Cook: 20 mins1. Pour olive oil into a soup pot and set over medium-high heat. Cook bacon in hot oil for about 2 minutes to brown, then stir in zucchini, celery, carrot, onion, bay leaf, 2 cloves garlic, and salt and pepper to taste.
2. Cook for about 8 minutes to soften vegetables, then add chicken stock, beans, and tomatoes.
3. When soup comes to a boil, stir in penne. Cook for about 8 minutes, until pasta is soft, then add basil. Turn heat down to low and keep warm.
4. Preheat broiler to High. Combine butter and remaining clove of minced garlic in a glass or plastic bowl, then microwave on High for 1 minute to melt.
5. Set bread on a baking sheet. Broil for about 1 minute on each side to brown, then coat with garlic butter and top with Parmesan. Broil again to brown the cheese.
6. Ladle soup into bowls, and top with the cheese bread. Serve.
