Ingredients

2 sachet dried active yeast, 4½ tsp if using bulk-packed yeast
500 ml warm water 40-45°C/100-110°F
120 g sugar
1 medium egg, beaten
60 g butter, melted
2 tsp salt
800 g white bread flour, approx
3 tbsp butter, melted as glaze

Instructions

Preheat the oven to Gas Mark 4, 180°C, 350°F.

Mix the yeast with the warm water in a large bowl. Stir in the sugar and allow to stand for several minutes. Add the egg, butter and salt followed by about ¾ of the flour. Mix together to form a dough; it will be quite soft at this point. Add further flour a bit a time until the dough stiffens but remains moist and glossy.

Turn out onto a lightly floured surface and knead briefly. Knead in additional flour until the dough becomes stiff and elastic, about 7-8 minutes. Shape to a ball and place in a lightly greased bowl. Roll the dough to cover with oil, cover and allow to rise in a warm place until doubled in size, 45-60 minutes.

Knock the dough down and turn out to a lightly floured surface, divide into half and cover with a damp tea towel. Allow to rest for 10 minutes.

Grease two medium to large baking trays. Divide each portion of dough into 12 portions. Pull and shape each portion into a ball by tucking the sides underneath as you rotate the ball.

Place the shaped rolls on the tins, allowing room to expand until almost touching, cover and allow to rise until just doubled in size, about 30 minutes. Remove the cover and brush the tops of the rolls with some of the melted glaze.

Bake the rolls for 15-17 minutes or until a medium golden brown and brush with the remaining glaze. Transfer to a wire rack and allow to cool completely.
