Ingredients
4 slice(s) | bacon, diced |
1 | parsnip, diced |
salt and freshly ground black pepper | |
½ bunch(es) | parsley, chopped |
2 | onions, chopped |
30 g | butter |
2 | carrots, sliced |
30 g | flour |
2 tbsp | thyme, chopped |
2 | bay leaves |
1 dash(es) | sherry, dry |
½ bulb(s) | celeriac, diced |
1 l | beef stock |
300 g | poultry, leftovers, diced |
Instructions
In a large saucepan, melt the butter. Add the onions and the bacon and fry until crispy. Add the remaining vegetables and cook stirring for a minute. Dust with the flour and cook for another 1-2 minutes. Pour in the stock and bring to a boil. Add the thyme and bay leaves. Season to taste with salt and pepper. Cover and cook over low heat for 10 minutes.Stir in the leftover poultry and simmer until hot. Season to taste with sherry, salt and pepper and serve sprinkled with parsley.
Serves 4 as a starter or 2 as main dish.
