Fancy eggs scramble recipe details
- Ingredients:
- 6 ounces Canadian bacon, diced
- 1/4 cup green onions, chopped
- 3 Tablespoons butter
- 12 eggs, beaten
- 1 cup mushrooms, sliced thin
- 2-1/2 cups bread crumbs
- 4 teaspoons butter
- 1/8 teaspoon paprika
- Cheese Sauce:
- 1 Tablespoon butter
- 2 Tablespoons flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups milk
- 4 ounces American cheese (no sharp cheese)
Cook bacon and onion in butter until tender. Add beaten eggs and scramble until set, but not dry. Add eggs and mushrooms to cheese sauce. Put in a lightly greased 9 x 13-inch baking dish. Combine butter, crumbs, and paprika. Sprinkle on top. Cover and chill. Bake uncovered at 350 degrees for 30 minutes.
Cheese Sauce:Melt butter. Blend flour, salt, and pepper. Add milk. Stir and cook until bubbly. Stir in American cheese.
