Ingredients
2 lb | liver, minced , pigs (traditional) but lamb will do |
115 g | bread crumbs or oats or these two mixed |
115 g | grated suet, can use butter or margarine if no suet available |
2 large | onions, minced |
2 large | eggs, beaten |
2 tsp | sage |
2 tsp | thyme |
½ tsp | ground nutmeg or mace |
salt and pepper, to taste | |
230 ml | good stock, for the onion gravy |
1 small | onion, grated |
1 tsp | tomato puree |
Instructions
Mix all the ingredients together in a large bowl. When mixed, mould into small cakes about the size of a billiard ball. Each ball should then be wrapped in pigs flead, the fatty membrane from inside the pig, but if this is not available, brush with a little melted butter and cover the entire dish with greased foil.Bake in a slow to moderate oven, about 250°F-300°F/120°C-150°C for about 40 minutes, until the tops brown. Allow to cool.
To serve hot, place in dish with the onion gravy and place in the oven until bubbling hot right through.
Serve with mashed potato and mushy peas.
