Ingredients
4 | trouts, cleaned and ready to cook |
200 ml | dry white wine, preferably Riesling |
250 g | cream |
50 g | butter |
1 tbsp | parsley, chopped |
3 | shallots, chopped |
1 tsp | chervil, chopped |
1 tsp | tarragon, chopped |
1 tsp | chives, chopped |
salt and pepper | |
paprika powder | |
flour |
Instructions
Season the fishes with salt and pepper and dip them in flour. In a pan heat some butter. Add the fish and fry over medium heat for a few minutes until slightly golden all around.Transfer into a buttered casserole dish. Fry the shallots in the pan until yellowish. Add the herbs and the wine. When boiling, add the cream and season to taste with salt, pepper and paprika powder. Pour the sauce over the fish.
Bake in the preheated oven at 180°C for 15-20 minutes. Place the fishes onto warmed plates. Quickly boil down the sauce until thickened. Drizzle the trouts with the sauce and serve with boiled potatoes.
